1 ready to cook Chicken
1 chorizo
6 dublin bay prawns
12 spanish mussels
500g squid
2 peppers
2 onions
2 cloves of garlic
1 kg tomatoes
250 g peas
300 g long grain rice
10cl Olive oil
1 dose saffron
Salt
Pepper
30cl of fish stock

The paella (of Valencian Paella, Stove ) is a dish of  round rice of Valencian origin and takes its name from the stove that is used in the cooking.
The most known Spanish cuisine was born, in effect, in the eighteenth century in the Horta of Valencia. The peasants of the area accommodate  in their own way the rice of the adjacent lagoon of Albufera. In 1920, a blacksmith of the village of Alaquàs, Garcia Montoro, begins the industrialization of this dish paella by technique of pusher tugs. Today, the family business GARCIMA sl has develope and manufactures for all the world this utensil.

Steps

Cut the chicken into cubes. Clean the mussels.
Peel and crush the tomatoes. Cut the onions, peppers, chorizo and garlic.

Brown the chicken in a pressure cooker with oil then add the peppers and onions and stir in the squid. Add the tomatoes, garlic, salt and pepper, saffron and the fish stock. Stir well.
Bring to a boil and cook for 5 minutes then add the rice and stir.
Add the peas, chorizo, prawn dublin prawns and the mussels.
Close the cooker.

When the steam starts to evacuate lower the heat and cook for 12 minutes.
